Cold berry bowl with snow dumplings

For 4 people
  • 110 g sugar
  • 250 g raspberries
  • 250 g red currants
  • 500 g strawberries
  • 50 g blueberries
  • 4 tbsp almond flakes
  • 1 protein (Size M)

Bring 160 ml water and 60 g sugar to the boil. Dissolve sugar. Sort the raspberries. Wash the currants and drain them well. Strip 150 g currants from the panicles. Divide the remaining panicles into smaller pieces. Wash and drain strawberries and blueberries. Clean and quarter the strawberries. Put 150 g of raspberries and red currants and 400 g of strawberries in a bowl. Pour the sugar solution over it and puree everything with a hand blender. Chill
Roast the flaked almonds in a pan without fat, remove. Beat the egg whites until stiff, pour in 50 g of sugar and a pinch of salt. Beat until the mixture is glossy and the sugar has dissolved. Heat the water in a large saucepan, do not let it boil. With 2 tablespoons dipped in water, prick 4 large dumplings from the meringue and let them slide into the boiling water. Put the lid on and let it steep for 5–6 minutes. Serve the cold bowl in bowls with the rest of the berries, snow dumplings and almonds
