Cold avocado soup with shrimp skewers

- 20 small frozen shrimp (blanched, deveined and peeled)

- 1 Lime
- 2 ripe avocados
- 100-150 ml Apple juice
- 500 ml Buttermilk

Halve the avocados, remove the stones and remove the meat with a spoon. Puree the avocados, lime juice, apple juice, 425 ml buttermilk and half of the chilli and season with salt and pepper. Wash the prawns and pat dry. Heat oil in a pan. Fry the prawns in it, turning, for about 4 minutes and season with salt and pepper. Put the prawns and lime wedges on 4 skewers. Arrange the soup and add streaks to the soup with 75 ml of buttermilk. Garnish with chili and pepper and serve with the skewers
