Cold avocado soup with shrimp skewers

For 4 people
  • 20 small frozen shrimp (blanched, deveined and peeled)
  • 1 Chilli pepper
  • 1 Lime
  • 2 ripe avocados
  • 100-150 ml Apple juice
  • 500 ml Buttermilk
  • 1 EL Oil
  • Salt
  • pepper
  • 4 kebab skewers

Let the prawns thaw. Halve the chilli lengthways, remove the seeds. Cut the chilli into thin strips. Halve the lime and squeeze out 1 half. Cut the other half into 4 corners and halve this again. Halve the avocados, remove the stones and remove the meat with a spoon. Puree the avocados, lime juice, apple juice, 425 ml buttermilk and half of the chilli and season with salt and pepper. Wash the prawns and pat dry. Heat oil in a pan. Fry the prawns in it, turning, for about 4 minutes and season with salt and pepper. Put the prawns and lime wedges on 4 skewers. Arrange the soup and add streaks to the soup with 75 ml of buttermilk. Garnish with chili and pepper and serve with the skewers
