Cod with paprika sauce

For 4 people
  • 4 red peppers
  • 2 Onions
  • 3 Garlic cloves
  • 2 Tomatoes (very ripe)
  • 5 –6 EL Olive oil
  • 1 TL tomato paste
  • 1 stem Thyme
  • 1 Bay leaf
  • 8 sheets basil
  • 8 Pieces of cod fillet (approx. 125 g each)
  • Salt
  • 2 EL Flour
  • Pepper
  • 50 g black olives

Wash the peppers, rub dry,halve, core and cut into strips. Peel the onions and cut into very thin rings. Peel and chop the garlic. Wash and clean tomatoes, rub dry and remove seeds. Cut the pulp into cubes

Heat 2 tablespoons of oil in a pan. Add onions, garlic, tomatoes and paprika, sauté briefly. Add tomato paste, fry lightly. Simmer the thyme, bay leaf and 4 basil leaves for about 20 minutes

Rinse the fish and pat dry. Season with salt and turn in flour. Knock off excess flour. Heat 3-4 tablespoons of oil in a large non-stick pan. Fry the fillets in it for 3–4 minutes per side. Season with a little pepper

Season the paprika mixture with salt and pepper. Remove the thyme and bay leaf. Pour the mixture into a mixing bowl and puree with a hand blender until it becomes smooth. Season with salt and pepper.

Arrange the fish on plates. Pour the paprika sauce over it. Garnish with olives and the remaining basil. Serve immediately. Fresh pasta or basmati rice tastes good with it
