Coconut yogurt with pineapple

  • 1 EL desiccated coconut
  • 1/2 370 ml-glass pineapple pieces; reduced calories
  • 150 g skimmed yoghurt
  • Mint

Roast coconut flakes in a pan without fat, remove and let cool. Drain the pineapple. Put some pineapple and desiccated coconut aside to decorate. Mix the rest with the yogurt.

Serve decorated with pineapple, desiccated coconut and mint.
