Coconut pancakes with kiwi salad

For 4 people
  • 2 golden kiwis
  • 2 green kiwi fruit
  • 8 EL maple syrup
  • 1–2 TL lemon juice
  • 25 g Butter or margarine
  • 2 eggs (size M)
  • 50 g Sugar
  • 1 pinch Salt
  • 1/4 l Milk
  • 200 g flour
  • 1/2 packet baking powder
  • 2–3 EL clarified butter
  • coconut chips

Peel the kiwi fruit and cut into small cubes. Mix 1 tbsp maple syrup, lemon juice and kiwi cubes. Melt the fat, let it cool. Mix the eggs, sugar and salt with the whisk of the hand mixer until creamy.

Stir in the fat and milk. Flour andMix in baking powder and stir in. Heat the clarified butter in portions in a large non-stick pan. Add 3–4 blobs with a small ladle or a tablespoon.

Bake until golden on each side over medium heat. Take out of the pan and keep warm. Process the remaining dough in the same way. Makes about 12 pancakes. Arrange the pancakes and kiwi salad. Decorate the pancakes with coconut chips and drizzle with the remaining maple syrup.
