  • 50 g flour
  • grated zest of 1 untreated lemon

Gently heat the egg white, sugar, 150 g desiccated coconut and honey. Take the pot off the stove. Sieve the flour onto the warm mixture and stir in. Fold in the remaining coconut flakes and lemon zest.

Place small heaps with two wet teaspoons on a baking sheet lined with baking paper. Reshape tips. Bake in the preheated oven (electric stove: 150 ° C / gas: level 1) for 25-30 minutes.

Take out of the oven and let cool down. In the meantime, melt the couverture over a hot water bath. Dip the tips of the coconut mountains in the couverture and allow to dry.
