Coconut macaroons

  • 1 pinch Salt
  • 200 g Sugar
  • 2 drops of bitter almond oil
  • 1 Knife tip Cinnamon
  • 200 g desiccated coconut
  • 60 round wafers

Beat the egg white and salt to a very stiff egg white. Add sugar and continue beating until the mixture is creamy. Mix in the remaining ingredients.

Preheat the oven to 120 degrees.

Place small heaps on the wafers with a wet teaspoon and place on a baking sheet lined with baking paper.
4.
Dry in the oven for about 30 minutes more than bake.
