Cocktail à la Waldorf

- 1 kg Celeriac
- 750 g Carrots
- 1 onion
- 100 g fresh horseradish li>
- 200 ml Apple juice
- 6–7 EL lemon juice
- 1 TL Broth
- salt
- pepper
- 2–3 EL liquid honey span>
- 10 EL Oil (e.g. B. 5 tbsp rapeseed oil + 5 tbsp walnut oil)
- 100 span> g Walnuts
- 300 g seedless grapes
- 2–3 (500 g) s pan> sour apples

- Peel and wash the celery and carrots. Slice into fine strips. Peel and chop the onion. Peel the horseradish, grate finely. Bring the apple juice, 5 tbsp water, lemon juice, onion, stock, a little salt and pepper to the boil.

- Stir in the horseradish, honey and oil. Mix with celery and carrots. Cool down a little. Knead well with your hands. Approx. Let it steep for 1 hour.

- Chop the nuts and roast them lightly. Wash and pluck grapes. Wash and core the apples and cut into small thin slices. Mix everything with the carrots and celery. Let it steep for another hour.

- Season to taste.
