Cock a Leekie (Scottish Chicken Leek Pot)

  • 1 ready-to-cook chicken (approx. 1.4 kg)
  • Salt
  • white pepper
  • 2 bay leaves
  • 1/2 Bund Parsley
  • 4 Stalk (s) fresh thyme
  • 3 slices breakfast bacon
  • 2 kg Leeks
  • 100 g dried semi-soft plums without stone

Wash the chicken and put it in a Give pot. Pour about three liters of water so that the chicken is covered. Add two teaspoons of salt, bay leaf, parsley, thyme and bacon. Bring everything to the boil and simmer in an open pot for 1 1/2 hours.

Skim off the foam several times. Clean, wash and finely chop the leek (dice). After 30 minutes of cooking, add 1/3 of the leek to the chicken and cook at the same time. Remove the chicken and let it cool down a little.

Pour the stock through a sieve and bring to the boil. Add the rest of the leek and prunes and simmer for another 15 minutes. Remove the skin and bones of the chicken and cut into bite-sized pieces.

Season the soup well with salt and pepper. Add meat and heat in it. Serve everything.
