Cock-a-Leekie (chicken soup with leek)

For 6 people
  • 1 ready-to-cook chicken (approx. 1.4 kg)
  • 1/2 Bund Parsley
  • 4 stem (s) Thyme
  • 2 bay leaves
  • 3 slices breakfast bacon
  • salt, white pepper
  • 2 kg Leeks
  • 100 g dried. semi-soft plums without stone

Wash the chicken, parsley and thyme. Put everything with bay leaf, bacon and about 2 teaspoons of salt in a large saucepan. Approx. Pour 3 liters of water until the chicken is completely covered. Bring to the boil and simmer uncovered for approx. 1 1/2 hours. Skim off the resulting foam

Clean the leek and wash well. Approx. Cut 1/3 into pieces. After about 30 minutes of cooking, add to the chicken and simmer. Finely dice the rest of the leek

Remove the chicken and let cool down a little. Sieve the stock and bring to the boil. Cover and simmer leek cubes and plums for approx. 15 minutes. Season with salt and pepper. Remove the meat from the skin and bones and cut into bite-sized pieces. Briefly heat the soup. Serve everything
