Clear broth with rice and strips of turkey breast

  • 50 g long grain rice
  • Salt
  • 1/2 Bundle Spring onions
  • 1 EL Oil
  • 3/4 l Fine vegetable stock (from the Tetra-Pak)
  • 100 g smoked turkey breast cuts

Put rice in plenty of boiling salted water and cover and leave to soak for about 20 minutes over low heat. In the meantime, clean and wash the spring onions and cut into fine rings. Heat oil in a pot. Sauté the spring onions in it. Pour in the stock, bring to the boil and cook for about 3 minutes. Cut the turkey meat into fine strips. Drain the rice and add to the broth with the turkey meat. Season to taste with salt and pepper
