Clear broth with pasta and broccoli

For 4 people
  • 1 onion
  • 1 EL Oil
  • 1 l Vegetable stock (instant)
  • 50 g small clam noodles
  • 200 g Broccoli
  • Salt
  • Pepper
  • 1/2 Bunch Parsley

Peel the onion and dice it finely. Heat the oil in a saucepan and sauté the onion in it. Deglaze with broth and bring to the boil. Add the pasta and cook in it for about 9 minutes. Clean and wash broccoli and cut into small florets. Cook in salted boiling water for 5-6 minutes. Drain, drain and add to the broth just before the end of the cooking time. Season to taste with salt and pepper. Wash the parsley, pat dry, pluck the leaves from the stems and finely chop. Sprinkle over the broth and serve on a plate.
