Classic ratatouille

  • 250 g Zucchini
  • 1 little aubergine
  • 400 g Tomatoes
  • 2 small onions
  • 1 red and yellow peppers
  • 1 Garlic clove
  • 2 stem (s) basil
  • 3 stem (s) Thyme
  • 3 stem ( e) Oregano
  • 2 Sprigs of rosemary
  • 4 EL Olive oil
  • 2 EL Tomato paste
  • Salt, pepper

Wash, clean and cut zucchini, aubergine and tomatoes. Peel the onions and finely dice them. Halve the peppers, clean, wash and cut into pieces. Peel garlic and chop finely.

Wash the herbs and dry themshake. Pluck the basil, thyme and oregano leaves and roughly chop. Pluck rosemary needles and chop finely.

Heat the oil in a large pan. Sauté the onion and pepper cubes in it for about 4 minutes. Add the garlic and other vegetables. Stir in tomato paste and chopped herbs and sauté briefly. Pour in 1⁄8 l of water.

Season with salt and pepper. Cook the vegetables for about 15 minutes over medium heat. Season to taste and serve the ratatouille. Baguette tastes good with it.
