Classic lentil soup

For 4 people
  • 250 g dried lentils
  • 400 g smoked streaky bacon
  • 1 large bunch of soup greens
  • 1-2 EL Mashed potato powder
  • Salt
  • white pepper
  • Parsley
Wash the lentils and soak in 11/2 liters of water overnight. Put the bacon and lentils in a saucepan with the soaking water and bring to the boil. Clean, wash and finely dice the soup greens. Add to the lentils and cook for about 30 minutes. Take out the bacon, remove the rind. Cut the bacon into slices. Stir the mashed potatoes into the soup, bring to the boil briefly. Season to taste with salt and pepper. Serve the lentil soup with the bacon slices and garnish with parsley
