Classic herring salad

For 6 people
  • 350 g potatoes
  • 1 Egg (size M)
  • 8 Matjesfilets
  • 1 onion
  • 2 sour apples
  • 200 g Beetroot (glass)
  • 200 g pickles ( Glass)
  • 250 g Boiled beef (e.g. from the leg)
  • 200 g sour cream
  • 100 g salad mayonnaise (50% fat)
  • 1–2 EL Fruit vinegar
  • 1 Pinch Sugar
  • Pepper
  • Salt
  • 1 glass (53 ml) fine capers

Wash the potatoes and cook them in plenty of boiling water for about 20 minutes. Rinse under cold water, drain and peel. Hard boil the egg in boiling water for about 8 minutes. Rinse the matjes and pat dry.

Peel and dice the onions and apples. Pour beetroot into a sieve, collect the juice. Dice meat, cucumber, beetroot, onion, apples, potatoes and matjes

For the marinade, stir together the sour cream, mayonnaise, vinegar and 100 ml beetroot juice. Season to taste with sugar, pepper and salt. Fold in the prepared salad ingredients and refrigerate for at least 4 hours. Peel and chop the egg. Add capers and egg to the salad and fold in. Arrange in a bowl. Black bread tastes good with it
