Citrus fruit salad with quark cream (diabetics)

For 4 people
  • 195 g peeled red grapefruit
  • 130 g peeled orange
  • 120 g peeled clementines
  • 150 g cleaned carambola
  • 120 g peeled banana
  • 100 g cleaned apple
  • juice of 1 Lime (approx. 40 ml)
  • liquid sweetener
  • 1/2 Vanilla pod
  • 250 g Cream Quark
  • 125 g Skimmed-milk yogurt
  • 20 g chopped pistachio nuts

Cut the citrus fruits, carambola and banana into slices, and cut the apple into wedges. Mix the fruit. Mix the lime juice and 1 splash of sweetener, drizzle the fruit over it. Cut the vanilla pod lengthways, scrape out the pulp. Mix the quark, yoghurt and vanilla pulp. Add sweetener to taste. Serve the fruit salad sprinkled with pistachios. Add quark cream extra
