Citrus fruit salad with eggnog mascarpone

  • 2 red or pink grapefruits
  • 2 Oranges
  • 3 Clementines
  • 1 (approx. 150 g) carambola
  • 1 big apple
  • 1 Banana
  • 2 Limes
  • 4 EL honey
  • 1/2 Vanilla pod
  • 250 g Mascarpone (Italian double cream cheese)
  • 150 g Skimmed-milk yogurt
  • 2 EL Sugar
  • 1/8 l Eggnog
  • 20 g chopped pistachio nuts
  • Lemon balm

Peel grapefruits, oranges and clementines so that the white skin is completely removed. Cut the fruit into slices. Wash the carambola and apple. Cut the carambola into slices. Quarter and core the apple and cut into wedges. Peel and slice the banana. Line a bowl with orange and grapefruit slices. Put the rest of the fruit in the middle. Squeeze limes, mix with honey and pour over the salad. Let it flow. In the meantime, cut the vanilla pod lengthways and scrape the pulp into a bowl. Add the mascarpone, yoghurt, sugar and eggnog (except for 1 tablespoon) and stir. Put in a bowl. Draw the remaining egg liqueur into the cream in a spiral. Sprinkle the fruit salad with pistachios and serve decorated with lemon balm. Just add the cream
