Citrus crepes

For 6 people
  • 150 g flour
  • 3 EL Sugar
  • Salt
  • 2 Eggs
  • 150 ml Milk
  • 6 EL Mineral water
  • 50 g Almond kernels (without skin)
  • 2 EL Butter
  • 2–3 EL Oil
  • 2 Oranges
  • 1 pink grapefruit
  • 2 EL Orange liqueur
  • 1 EL Icing sugar

Mix together flour, 1 tbsp sugar, 1 pinch of salt, eggs, milk and mineral water. Let the dough soak for about 15 minutes.

Caramelize 2 tablespoons of sugar in a pan. Add the almonds and butter. Brown the almonds in it while stirring. Spread on a lightly oiled plate and let cool down.

Peel the oranges and grapefruit so that the white skin is completely removed. Cut out the fillets between the separators. Mix with liqueur and powdered sugar.

Brush a pan (approx. 20 cm Ø) with a little oil. Bake about 12 golden brown crêpes one after the other from the batter. Keep warm. Arrange the crepes with citrus fruits and almonds. Vanilla ice cream or cream tastes good with it.
