Separate the egg, chill the egg white. Mix the flour, salt, 100 g sugar and 2 teaspoons cinnamon in a bowl. Add the butter in pieces and the egg yolk. First knead with the dough hook of the hand mixer, then with your hands to form a smooth dough. Cover and chill the dough for approx. 1 hour.

Briefly knead the dough, roll out in portions on a floured work surface approx. 2 mm thick. Cut out hearts (approx. 6 cm Ø) and spread on baking sheets lined with baking paper. Mix 1 tsp cinnamon and 60 g sugar. Brush the hearts with egg white and sprinkle with cinnamon sugar. Bake tray by tray one after the other in the preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: see manufacturer) for 8-10 minutes. Let cool down on a wire rack
