Cigarette Russe-Charlotte with lemon mascarpone cream and apricot puree

For 4 people
  • 1 untreated lemon
  • 150 g Mascarpone
  • 50 g sugar
  • 2 sheet gelatine
  • 125 g whipped cream
  • 2 packs (110 g each) biscuit rolls
  • 1/2 425 ml-can apricots
  • 1-2 candied lemon wedges and
  • Lemon balm
  • Aluminum foil
30 minutes
Wash the lemon with hot water and rub dry. Peel off the peel with a zest, cover with damp kitchen paper and refrigerate. Halve and squeeze the lemon. Mix the mascarpone, sugar and lemon juice with the whisk of the hand mixer for 2-3 minutes until smooth. Soak the gelatine in cold water. Squeeze out the gelatine, dissolve it. Stir in 3 tablespoons of mascarpone and stir into the remaining mascarpone. Chill the mass until it starts to gel. Whip the cream until stiff and fold in. In the meantime, wrap the dessert rings (approx. 7 cm Ø) tightly with aluminum foil on the underside. Halve the rolls diagonally and place them close to the inner edge of the ring. Pour in the mascarpone mixture and let it set for about 2 hours. Puree the apricots in the juice. Arrange sauce and Cigarette Russe Charlotte on plates. Decorate with lemon zest, candied lemon pieces and lemon balm
