Christmas red cabbage

For 6 6 people
  • 1 red cabbage (approx. 1 kg)
  • 2 Onions
  • 2 EL clarified butter
  • 1 bay leaf
  • 1 Cinnamon stick
  • 200 ml red wine
  • 6 EL Apple cider vinegar
  • 3 EL Sugar
  • Salt
  • 2 tart apples
  • 3–4 EL Currant jelly

Wash the cabbage, quarter it and cut out the stalk. Slice or cut the cabbage into fine strips. Peel and halve the onions and cut into fine strips.

Heat the lard in a large saucepan. Sauté the onions in it. Stir in the cabbage and spices. Stir in the wine, vinegar, sugar and approx. 1 teaspoon salt. Bring to the boil and stew covered for approx. 1 hour. Stirring occasionally.

Possibly. Pour some water so that nothing burns.

Peel, quarter, core, dice the apples and fold into the red cabbage after approx. 15 minutes. Stir in the jelly. Season the cabbage with vinegar and sugar.
