Christmas panettone

Halve the cherries. Approx. Set aside 1 tablespoon of cherries and 1 teaspoon each of lemon peel, orange peel and almonds for decoration. Mix the rest of the cherries, lemon peel, orange peel and almonds.

Melt the butter. Pour in milk, warm up to lukewarm. Crumble in the yeast, dissolve in it. Mix the flour, baking powder, sugar, vanilla sugar, orange peel, and 1⁄2 level teaspoon salt in a mixing bowl.

Add the milk mixture and eggs. Knead everything until smooth with the dough hook of the hand mixer. Knead the fruit and almond mixture into the dough. Cover and let rise in a warm place for about 1 ¼ hours.

Grease the small springform pan (20 cm Ø). Place a strip of baking paper (approx. 25 x 70 cm) from the inside on the edge of the mold so that an approx. 25 cm high edge is created. Fold a 2.20 m long piece of aluminum foil three times so that it is a good 70 cm long.

Use it to reinforce the baking paper strip from the outside and fold the ends tightly (see photo below).
