Christmas cheese cake

  • 250 g flour

For the base, use all the ingredients and 2 tablespoons of very cold water to make a smooth shortcrust pastry. Approx. Chill for 30 minutes. Line the bottom of a springform pan (24 cm Ø) with baking paper.
Roll out 1/3 of the dough on top. Close the springform rim around it. Shape the second third of the dough into a long roll, place it on the edge of the springform pan and press approx. 3 cm high. Cover the rest of the dough and put it in a cool place.
Finely chop the cherries and pineapple. Mix with lemon peel. Mix the layered cheese, sugar and vanilla sugar until frothy. Gradually stir in the eggs. Fold in lemon zest and juice, almonds and 200 g candied fruit.
Pour the cheese mixture into the springform pan, smooth out. Bake the cake in the preheated oven (electric stove: 175 ° C / gas: level 2) for about 1 hour. Take out, let cool down. Line a baking sheet with parchment paper.
RemainingRoll out the dough into a plate (24 cm Ø). Cut the plate into 12 pieces of cake. Whisk the egg yolk and 1 teaspoon of water. Brush the cake pieces with it. Sprinkle 6 pieces with remaining fruit.
Cover the remaining 6 pieces with almond flakes. Bake for 15-20 minutes at the same temperature. Then let it cool down. Take the cheese cake out of the mold and place on a cake plate. Whip the cream very stiffly, pour in the cream setting.
Sprinkle 12 dots on the edge of the cake. Now alternately place a piece of cake with fruit and one with almonds at an angle on the dots of cream. Makes about 12 pieces.
