1.
Bring 1/8 liter of water, butter and salt to the boil. Add the flour all at once and stir with a wooden spoon until the mixture loosens from the bottom of the pan as a lump. Transfer to a bowl and stir in 1 egg immediately. Let the dough cool for about 10 minutes. Mix the remaining eggs one after the other with a wooden spoon. Each egg must be completely with theConnect ground before adding the next egg. The dough should fall off the spoon, shiny and difficult to tear. Pour the mixture into a piping bag with a perforated nozzle and squirt 6 circles (8 cm Ø) onto a baking sheet lined with baking paper. Bake in the preheated oven (electric stove: 225 ° C / fan oven: 200 ° C / gas: level 4) for 20-25 minutes. (Do not open the door for the first 15 minutes!) Let the choux nests cool down for 5 minutes, cut open crossways with a saw knife. Let cool down. In the meantime, knead the marzipan and powdered sugar. Shape 6 larger balls for the body. Roll 6 smaller balls, shape them to a point at one end, cut the tip with a pair of scissors, so that the rabbit ears arise. Shape small paws out of marzipan. Put together with a little water or egg white. Paint the eyes, noses and buttons of the rabbits with brown, red and green sugar script. Shape the remaining marzipan into small eggs, brush with a little water and roll in 20 g pistachios. For the cream, mix the mascarpone, yoghurt, sugar and vanilla sugar together. Pour the cream into a piping bag with a star nozzle, spray onto the underside of the nests. Place the lid on top and place marzipan bunnies in the middle. Decorate with pistachio eggs and sprinkle with 20 g pistachios
