Wash the pears, cut eighths, cut out the core. Caramelize 2 tablespoons of sugar in a pan. Pour in the wine, 1/8 liter of water and lemon juice while stirring. Stir until the caramel has dissolved. Add the pears and cook for about 5 minutes. Let cool in the brew. Chop the chocolate. Warm the cream, melt the chocolate in it. Allow to cool slightly. Mix the fat, 20 g sugar, vanilla sugar, salt and egg until creamy. Mix the flour, cocoa and baking powder. Stir in alternately with chocolate cream and milk. Preheat and grease the waffle iron. Bake about 3 double waffles one after the other. Remove the pears from the brew and drain. Arrange 1 waffle each with 2 pear slices and 1 ice cream ball on plates.
