Broad white beans in tomato sauce
- 500 g dried large, white bean kernels
- 2 medium-sized onions
- 1 Garlic clove
- 2 (approx. 500 g) Beefsteak tomatoes
- 250 ml olive oil
- 1 EL tomato paste li>
- 1 small sprig of fresh rosemary
- Salt
- pepper
- 1/2 TL Sugar

- Put the beans in a bowl, pour in 1 liter of cold water and leave to soak overnight. The next day, put in a saucepan with the soaking water, bring to the boil and simmer covered over low heat for 45-60 minutes. Peel the onions and garlic. Dice the onions, leave the garlic whole. Wash tomatoes, cut out the stem end. Finely dice tomatoes. Wash rosemary and shake dry. Heat 5 tablespoons of olive oil in a saucepan and sauté onions and garlic. Add the chopped tomatoes, tomato paste, rosemary and the rest of the olive oil (or later?) And season with salt, pepper and sugar. Bring to the boil and simmer over medium heat for 10-15 minutes. Stir in between. Pour the beans on a sieve, drain and add to the tomato sauce. Simmer beans in it over low heat for 5-10 minutes. Season with salt and pepper. Serve warm or cold
