Braised chicory

For 4 people
  • 6 Pistons Chicory (approx. 750 g)
  • 1 onion
  • 2 EL Olive oil
  • 100 ml Vegetable stock (instant)
  • 1 pack (370 g) Tomato pieces with herbs
  • salt
  • pepper
  • 150 g cooked ham
  • 100 g black olives
  • 1 Bundle Chives

Remove the outer leaves from the chicory. Halve the chicory lengthways, cut out the stalk. Peel the onion and cut into sticks. Sauté in hot oil. Fry the chicory halves in the oil on both sides.

Add the stock and tomato pieces. Season with salt and pepper and cook for about 10 minutes over medium heat. Cut the ham into fine strips. Add the ham and olives and heat briefly. Wash the chives, pat dry and cut into rolls.

Sprinkle over the braised chicory. Farmhouse bread tastes good with it.
