1.
Wash the chicken, pat dry and use a large knife (fly knife) to cut the chicken in half along the breastbone. (Tip: For the inexperienced housewife, with the corresponding lack of tools, it is advisable to leave this work to the butcher.) Season evenly on all sides with salt, pepper and paprika.
2.
Brush with oil and place in a flat roasting pan or baking sheet in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) Cook for about 90 minutes. Pour half of the beer. In the meantime, clean and brush the mushrooms.
3.
Clean the leek, cut in half lengthwise, wash and cut into pieces approx. 5 cm long. Peel the onions and cut into wedges. Clean, wash and quarter the tomatoes. After 30 minutes of cooking, add the vegetables to the chicken.
4.
Season with salt and pepper. Pour in the remaining beer 10 minutes before the end of the cooking time.
