Apricots wrapped in bacon

For 12 pieces
  • 12 Apricots (approx. 50 g each)
  • 24 Almonds (skinless)
  • 12 slices (10 g each) smoked, streaky breakfast bacon
  • 2-3 stem (s) Thyme
  • 2-3 EL Olive oil
  • Mint and Thyme

Apricots wash thoroughly. Cut each apricot in half and remove the stone. Put 2 almonds in each well. Fold the apricots back together and wrap each one with 1 slice of bacon. Wash the thyme, pat dry and pluck the leaves from the stems. Heat the olive oil in a large pan and fry the apricots over a medium heat for about 4 minutes, turning. Add the thyme 1 minute before the end of the roasting time. Serve the apricots garnished with mint and thyme in a bowl. Baguette tastes good with it
