Apricot Bacon Rolls (Rumaki)

  • 1 pack (200 g) dried apricots
  • 175 ml dry white wine
  • 12 peeled almond kernels
  • 24 roasted peanuts
  • 12 slices (approx. 120 g) Breakfast bacon
  • 1 EL Oil
  • 24 small wooden skewers

Cut the apricots lengthways and soak for a few hours covered with wine. Drain the apricots well. Fill half of the apricots with almonds and the other half with peanuts. Wrap half a slice of bacon around each and secure with wooden skewers. Heat the oil in a pan and fry the bacon rolls all around until crispy. Makes approx. 24 rolls
