Apricot and quark sprinkles from the tray

Warm milk to lukewarm. Melt 75 g butter over low heat and let cool lukewarm. Put 450 g flour in a bowl and make a well in the middle. Crumble in the yeast and sprinkle with 1 teaspoon of sugar. Pour in 100 ml milk, mix with sugar and yeast and mix with a little flour from the edge to a thick paste. Cover and let rest in a warm place for about 15 minutes. Drain the apricots well in a colander. Add salt, 100 g sugar, vanilla sugar, 1 egg, 100 ml milk and melted butter to the pre-dough and knead into a smooth dough using the dough hook of the hand mixer. Cover and let rise in a warm place for about 30 minutes. Knead 200 g of flour, chopped almonds, 200 g of softened butter and 125 g of sugar with the dough hook of the hand mixer to form sprinkles, possibly reshaping with floured hands. Chill the streusel. Wash lemon and rub dry. Rub the peel thinly and squeeze the lemon. Mix 100 g butter and 250 g sugar with the whisk of the hand mixer until creamy. Gradually stir in the quark, sour cream, pudding powder, lemon juice and zest. Stir in 7 eggs one at a time. Knead the yeast dough again with your hands on a lightly floured work surface. Roll out the dough into a rectangle (approx. 34 x 43 cm). Line the greased drip pan of the oven (32 x 39 cm) with the dough, press firmly on the edge and cover and let rise for about 30 minutes. Put the quark mixture on top and smooth it out. First spread the apricots, then the crumble on the dough. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for 25–30 minutes. Remove the cake and let it cool on a wire rack
