Apricot and marzipan cake

Grease springform pan (26 cm Ø). Mix the fat, 100 g sugar, salt and vanilla sugar until creamy. Stir in eggs one at a time. Mix flour and baking powder, stir in alternately with 5 tbsp cream. Brush into the mold. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for about 25 minutes. Cool down

Soak gelatine in cold water. Coarsely grate 80 g of marzipan. Mix 6 tbsp milk, pudding powder and 3 tbsp sugar. Bring the rest of the milk to the boil, stir in the pudding powder, simmer while stirring for at least 1 minute. Remove from heat, stir in grated marzipan. Immediately squeeze out the gelatine, dissolve in the hot pudding while stirring. Allow to cool, stirring frequently

Stir liqueur into the pudding. Whip 300 g cream until stiff, sprinkling in 1 tbsp sugar. Fold into the pudding. Drain the apricots. Close the cake ring around the cake base. Warm up the jam, spread on it. Place the apricots on top, except for 2-3 halves, bulging upwards. Spread the marzipan cream on the apricots. Min. Chill for 4 hours

Coarsely grate 120 g of marzipan, knead with 60 g of powdered sugar. Roll out round (26 cm Ø) on a little powdered sugar. Cut into approx. 16 pieces of cake and roll up 1/3 of the tip. Place on top of the cake

Cut remaining apricots into wedges. Whip 100 g cream until stiff. Decorate the cake with cream, apricot wedges, cocoa and chocolate chips
