Appletiramisu

For 6 people
  • 600 g apple (e.g. Boskop)
  • juice of 1 lemon
  • 80 g Sugar
  • 250 g Mascarpone
  • 500 g Lean quark
  • 35 ml Milk
  • 1 packet vanillin sugar
  • 50 ml Apple juice
  • 2 EL Calvados
  • 50 g ladyfingers
  • 2 EL Cocoa powder
  • 1 TL ground cinnamon

Peel, quarter and core the apples. Cut the pulp into cubes. Put lemon juice, 30 g sugar and 35 ml water in a saucepan, bring to the boil and simmer for about 10 minutes while stirring.

Let the compote cool down. Mix the mascarpone, quark, milk, vanilla sugar and 50 g sugar until creamy. Mix the apple juice and calvados. Line a rectangular shape with the ladyfingers (set aside 2), drizzle with the liquid.

Then thatSpread the apple compote. Finally, spread the mascarpone cream loosely on top. Dust with cocoa and cinnamon. Crumble the remaining biscuit and sprinkle over the tiramisu just before serving.
