  • 1250 g apples (e.g. Boskop)
  • juice of 1/2 lemon
  • 2 packet vanillin sugar
  • 150 ml Apple juice
  • 60 g crispy oat flakes
  • 60 g Sugar
  • 250 g whole milk yogurt
  • mint
  • aluminum foil
  • Oil

Wash 1 apple, pat dry. Cut off a piece (approx. 5 mm thick) with the skin on all four sides. Cut out 4 hearts with a small cutter. Drizzle with 1 teaspoon of lemon juice and set aside. Peel, quarter and core apples and cut into cubes. Put the vanilla sugar, apple juice and the remaining lemon juice in a saucepan. Cover and bring to the boil, simmer over low heat for 8-10 minutes. Remove from heat and let cool. Toast the oat flakes in a pan without fat. Sprinkle with sugar and let it caramelize slightly. Place on a piece of aluminum foil lightly coated with oil and spread, leave to cool. Distribute the applesauce lukewarm or cold in 4 deep plates or bowls. Place the yogurt on top, sprinkle with brittle. Serve decorated with apple hearts and mint
