Apple yogurt waffles with applesauce

For 8 waffles
  • 1 untreated lemon
  • 1 kg Apples
  • 4 tbsp + 50 g sugar
  • 100 g lactose-free butter or margarine
  • pulp of 1/2 vanilla pod
  • 1 Pinch Salt
  • 3 eggs (size M)
  • 175 g flour
  • 1 TL baking powder
  • 100 g lactose-free natural yoghurt
  • 150 g Lactose-free vanilla yoghurt

Wash the lemon with hot water, rub dry and peel thinly. Halve the fruit and squeeze out the juice. Peel, quarter and core the apples, except for one small apple. Cut the pulp into small pieces. Stew with 4 tablespoons of lemon juice and 3 tablespoons of water in a closed pot for about 10 minutes. Season to taste with 4 tablespoons of sugar and finely chop with a hand blender. Let the applesauce cool down, then chill. For the waffles, stir together the fat, 50 g sugar, vanilla pulp, lemon zest and salt until creamy. Stir in eggs one by one. Peel and roughly grate the rest of the apple. Mix the flour and baking powder, mix in alternately with the natural yoghurt. Fold in grated apple. Preheat the waffle ironand grease lightly. Bake 8 waffles one after the other from the batter. Arrange the finished waffles with applesauce and vanilla yoghurt
