Apple wedges with wine foam

For 4 people
  • a good 1/4 l white wine
  • 4-6 EL Sugar
  • 1 Package Vanillin-Sugar
  • 2 large apples
  • 2 fresh eggs (Gr. M)
  • grated peel + 2 tbsp
  • juice from 1 untreated Lemon
  • 1 EL cornstarch
  • 1 EL go. Pistachio kernels
  • Apple slices and mint

Wine, sugar Bring it and vanilla sugar to the boil. Wash, quarter and core the apples. Cut apple quarters into thick wedges and immediately add to the wine brew. Cover and let stand over low heat for 3-4 minutes. Lift out the apple wedges and let them drain.
Pour the wine stock through a fine sieve into a high saucepan. Add eggs, lemon zest, lemon juice and starch and stir until smooth. Beat over low heat for 10-12 minutes, stirring constantly, until the sauce rises and becomes thick
Arrange the apples and wine foam on 4 dessert plates. Sprinkle with pistachios. Possibly. decorate with apple slices and mint
You can use dry, semi-dry or sweet for the wine foam Take white wine. However, so that it doesn't get too sweet, you should carefully dose the amount of sugar and season it to taste in between
