Apple strudel

  • 125 g + 2 tbsp butter
  • 50 g Breadcrumbs
  • 40 g pine nuts
  • 400 g apples
  • 1 packet Bourbon vanilla sugar
  • grated zest of 1/2 organic lemon
  • 2 EL lemon juice
  • 1 Egg (size M)

Mix the flour, baking powder, 125 g sugar and salt in a bowl. Add 1 egg and 125 g butter in flakes. First knead with the dough hook of the hand mixer, then with your hands to form a smooth dough. Wrap in foil and chill for about 45 minutes

Melt 2 tablespoons of butter in a pan. Roast the breadcrumbs and pine nuts in it. Pull from the stove and let cool down. Peel, cut into eighths and core the apples. Cut the apples into thin slices. Mix with 2 tablespoons of sugar, crumb mixture, vanilla sugar, lemon zest and lemon juice. Roll out the dough in a rectangular shape (approx. 26 x 37 cm) on a floured work surface. Put the apple mixture on the dough, leaving about 2 cm free. Fold the short sides over the filling, then roll up from the long side

Place the strudel on a baking sheet lined with baking paper. Whisk 1 egg, brush the strudel with it. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: see manufacturer) for 25–30 minutes. Let cool on a wire rack. Dust with powdered sugar if necessary. Whipped cream tastes good with it
