Apple strudel with vanilla sauce

Wash the raisins, drain them and sprinkle with ru drizzle m. Cover and leave to draw. For the vanilla sauce, cut the vanilla pod lengthways and scrape out the pulp. Put the milk, cream, vanilla pod and pulp in a saucepan. Bring to the boil, let cool down for about 10 minutes. Mix egg yolks and 75 g sugar in a metal bowl. Pour the vanilla milk through a sieve and stir in. Beat over a warm water bath to a frothy cream, chill. Knead the flour, salt, eggs, oil and 3 tablespoons of water with your hands to form a smooth dough. Approx. Knead vigorously on the worktop for 10 minutes. If necessary, add a few drops of oil if the dough gets too dry. Cover and let rest at room temperature for about 30 minutes. Peel and quarter the apples and remove the core. Cut the quarters into pieces, drizzle with lemon juice and mix with the almond sticks and raisins. Melt the butter in a saucepan. Strudel pastry on a tea towel dusted with flourroll out. Then pull it out very thinly with floured hands (approx. 65 x 45 cm). Brush the dough with half of the butter. Sprinkle with breadcrumbs and spread the apple mixture on top. Sprinkle with 50 g of sugar. Beat the dough over the apples on the shorter sides. Roll up the strudel from the long side using the tea towel. Place the strudel diagonally on a baking sheet lined with baking paper (seam facing down) and brush with the remaining butter. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for 30-35 minutes. Let the strudel cool down a little and dust with powdered sugar.
