Apple strudel muffins

For 6 people
  • 260 g flour
  • 0.5 tsp baking soda
  • 2 TL Baking powder
  • 200 g Chocolate Raisins
  • 1 TL cinnamon
  • 1 pc. Egg
  • 75 ml Oil
  • 120 g Granulated sugar
  • 240 g Buttermilk
  • 200 g Apple sauce
  • 1 TL Vanilla flavor
  • 1 TL Lemon juice

Preheat the oven to 180 ° C, either equip the muffin tray with paper cases or grease it.
Mix the dry ingredients, i.e. flour, baking soda, baking powder, cinnamon and chocolate raisins in a bowl. In another bowl, crack open the egg and whisk. Then add oil, granulated sugar, buttermilk, vanilla flavoring, lemon juice and approx. 170 g of the applesauce.
Now add the dry ingredients and stir everything briefly.
Put one tablespoon of batter into each of the muffin molds, then pour about 2 teaspoons of apple sauce over them and fill the molds with the batter. The whole thing at 180 ° CBake on the middle rack for 20-25 minutes, sprinkle the finished muffins with cocoa if necessary.
