Apple sprouts salad

For 4 people
  • 1 Fennel bulb (approx. 250 g)
  • 1 (approx. 100 g) carrot
  • 2 Apples
  • 50 g Radish sprouts
  • 50 g Field salad
  • 1 onion
  • 4 EL Apple cider vinegar
  • salt
  • pepper
  • 2 EL Walnut oil
  • 40 g Comté cheese

Clean, wash and slice the fennel. Peel and wash the carrot and cut into fine sticks. Wash the apples, rub dry, cut in half and cut 4 thin slices from the center. Quarter and core the apples and slice into thin sticks. Rinse and drain the sprouts. Clean and wash the salad. Peel onion and chop finely. Mix the vinegar, salt and pepper together. Beat in the oil. Mix all the salad ingredients with the vinaigrette. Season again to taste. Arrange the salad on plates or a platter. Finely slice the cheese and pour over the salad. Garnish with apple slices
