Apple soup with snow dumplings

For 4 people
  • 2 medium-sized apples
  • 700 ml unfiltered apple juice
  • 2 EL Sugar
  • 50 g Raisins
  • thinly peeled peel from
  • 1/2 untreated lemon
  • 25 g cornstarch
  • 1 protein (size M)
  • 1/2 TL Lemon juice
  • ground cinnamon
  • lemon balm

Wash the apples, quarter them, cut out the core and cut the apple quarters into wedges. Bring the apple juice, apple wedges, 1 tablespoon sugar, raisins and lemon zest to the boil. Mix the cornstarch in a little water until smooth.
Stir into the boiling soup and briefly bring to the boil again. Beat egg whites until stiff. Stir in the remaining sugar and lemon juice. Place small dumplings with 2 teaspoons on the hot (no longer boil!) Soup and cover and let stand for 4-5 minutes.
Place the soup in deep plates. Sprinkle snow dumplings with cinnamon. Serve garnished with lemon balm.
