Apple semolina cake

For 4 people
  • 2 large apples (e.g. Boskop or Holsteiner Cox)
  • Juice and grated zest of 1 untreated lemon
  • 3 eggs (size M)
  • 75 g butter or margarine
  • 75 g Sugar
  • 500 g Lean quark
  • 75 ml Milk
  • 50 g Durum wheat semolina
  • 1 EL flour
  • 1 packet Vanillin sugar
  • 2 EL Almond flakes
  • 3 EL Apricot jam
  • brown sugar and powdered sugar
  • fat and breadcrumbs

Peel and quarter the apples and cut out the core. Cut into the apple quarter lengthways and drizzle with lemon juice. Separate eggs. Mix the fat, egg yolks and sugar until creamy.

Stir the lemon zest, quark, milk, semolina and flour into the egg mixture. Beat the egg whites until stiff while drizzling in the vanillin sugar. Fold the egg whites under the curd mixture. Fill into a greased casserole dish (approx. 30-32 cm Ø) sprinkled with breadcrumbs.

Place apple quarters on top and sprinkle with flaked almonds. Bake in the preheated oven (electric stove: 175 ° C / gas: level 3) for about 45 minutes. Heat the apricot jam and brush the apples with it 10 minutes before the end of the baking time.

Sprinkle with brown sugar and powdered sugar as desired.
