Apple sauce with crispy brittle

- 1,25 kg sour apples span>
- juice of 1/2 lemon
- 2 packet vanillin sugar
- 150 ml Apple juice
- 6 heaped tablespoons crispy oat flakes
- 2-3 heaped tablespoons sugar
- Oil
- 250 g whole milk yogurt li>

- Wash 1 apple and peel off a long piece of peel. Use a small cookie cutter to cut out 4 hearts and toss them in 1 teaspoon of lemon juice. Peel all the apples, quarter them and cut out the cores. Then cut the apple quarters into cubes

- Put the apple cubes with vanillin sugar, apple juice and the rest of the lemon juice in a saucepan. Cover everything and bring to the boil and then simmer over low heat for about 8 minutes until the apples are soft but still chunky. Let the puree cool down, stirring frequently in between

- Scatter the oat flakes in a dry pan and roast them until golden brown over medium heat. Scatter the sugar over it and let it melt until golden. Caution: it gets very hot! Immediately distribute the oatmeal brittle onto a flat plate lightly coated with oil and let it cool.

- Crumble the brittle into small pieces. First put the applesauce in 4 deep plates, spread the yoghurt on top and finally sprinkle the brittle pieces over it. Decorate the apple sauce with the apple hearts and a few mint leaves
