Apple rice pudding (diabetic)

  • 1/2 Vanilla pod
  • 1/8 l low-fat milk
  • 1 Piece (s) untreated lemon peel
  • 1 Pinch Salt
  • 30 g rice ( z. B. long grain rice)
  • 100 g pitted apple
  • 125 g Lean quark
  • liquid sweetener
  • ground cinnamon
  • balm

Cut the vanilla pod lengthways. Scrape out the vanilla pulp with the back of a knife

Bring the milk, 3-4 tablespoons of water, vanilla pod, vanilla pulp, lemon zest and salt to the boil while stirring. Add rice. Cover and leave to soak over low heat for about 20 minutes. Remove the lemon peel. Let the rice cool down

Wash the apple and cut into pieces or thin wedges as desired. Stir the quark into the rice and add sweetener to taste

Approx. Put 3/4 of the apple and rice pudding in a bowl. Arrange the remaining apple on top. Sprinkle some cinnamon over it and decorate with lemon balm if necessary
