Apple-pudding-cake

For 12 pieces
  • 100 g Butter
  • 150 g flour
  • 4 Eggs (size M)
  • 100 g + 2 tbsp sugar
  • 800 g sour apples
  • juice of 1 lemon
  • 2 EL breadcrumbs
  • 1 Parcel 'Vanilla flavor' pudding powder
  • 125 g whipped cream
  • 200 g sour cream
  • 50 g Almond flakes

Knead the butter in flakes, flour, 1 egg and 50 g sugar to form a smooth dough. Cover and cool for about 30 minutesput. In the meantime, peel and quarter the apples and cut out the core. Cut the pulp into fine wedges.

Drizzle with lemon juice, bring to the boil briefly, cool and allow to drain. Roll out the dough on a work surface lightly dusted with flour (30 cm Ø). Place in a greased springform pan (26 cm Ø).

Press on the edges. Prick the bottom several times with a fork, sprinkle with breadcrumbs and spread the apples on top. Mix the pudding powder, cream, sour cream, 50 g sugar and 3 eggs. Pour over the apples.

Sprinkle with flaked almonds and 2 tablespoons of sugar. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for 45-50 minutes. Let cool in the tin on a rack.

Serve dusted with powdered sugar.
