Apple Pop Pies

For 8 pieces
  • 300 g + some flour
  • 75 g Sugar
  • salt
  • 200 g cold butter

  • 2 EL Sultanas
  • 2 EL Apple juice
  • 1 EL Sugar
  • ½ teaspoon ground cinnamon
  • 1 (approx. 200 g; e.g. Elstar) apple
  • 1 EL lemon juice
  • 1 egg yolk
  • 3 EL whipped cream

Prepare the basic dough (see recipe' One dough for everyone ') and chill for about 1 hour.
Mix the sultanas and apple juice and let stand for about 30 minutes. Mix the sugar and cinnamon. Wash the apple and cut out the core. Cut the apple straight at the top and bottom, cut across into 8 approx. 4 mm thin slices and drizzle with lemon juice.
Line the baking sheet with baking paper. Drain the sultanas and roughly chop them. Preheat the oven (electric stove: 200 ° C / convection: 175 ° C / gas: see manufacturer). Roll out the dough on a floured work surface to about 3 mm thin.
Approx. Cut out 16 circles (approx. 2 cm larger than the apple slices), knead the leftovers briefly and roll out.
Place apple slices on 8 circles of dough. Spread the sultanas in the middle of each apple. Sprinkle slices with half of the cinnamon sugar. Cut out or cut out small motifs from the remaining dough circles. Place the dough circles on the apple slices.
Press the edges of the dough together with a fork. Place the cut out mini-elements on the pastry lid. Whisk the egg yolks and cream together. Brush the dough with it. Sprinkle with the rest of the cinnamon sugar. Place on the baking sheet.
Bake in a hot oven for 15–20 minutes until golden brown. Take out and let cool down.
