Flour, 75 g sugar and 1 pinch Mix the salt. Add the butter in flakes and add 4-5 tablespoons of cold water. First work with the dough hook of the hand mixer, then with your hands into a smooth dough. Wrap the dough in foil and refrigerate for about 30 minutes. Roll out 2/3 of the dough on a floured work surface into a circle (approx. 30 cm Ø). Place the dough in a greased and floured dish (26 cm Ø) and gently press the edge. For the filling, peel, quarter and core the apples and cut into small cubes. Mix the apples, starch, 3 tablespoons of sugar, lemon juice and cinnamon. Spread the filling on the dough. Set aside a small piece of the remaining dough. Roll out the dough into a circle (approx. 26 cm Ø) on a floured work surface. Place as a lid on the filling. Press the edges of the dough together. Roll out the remaining dough thinly and cut out decorations. Decorate the pastry lid with it. Bake in the preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 1 hour. Take the finished cake out of the oven, let it cool and chill
