Apple Pie (Trifle)

  • 1,5 kg sour apples
  • 200 g Sugar
  • 175 ml Apple juice
  • 1 packet vanillin sugar
  • 2 packets cream stabilizer
  • 400 g Crème fraîche
  • 250 g whipped cream
  • 100 ml Whiskey
  • 350 g Shortbread

Peel, quarter, core and cut the apples into pieces. Caramelize 100 g sugar in a saucepan. Add apples and deglaze with 100 ml apple juice. Simmer for 5–10 minutes (depending on the type of apple) until the apples just start to crumble. Remove from heat and let cool down

Mix 100 g sugar, vanilla sugar and cream setting agent. Mix the crème fraîche with the sugar mixture. Whip the cream until stiff and fold in. Mix 75 ml apple juice and whiskey. Dip the shortbread into the whiskey mixture one after the other. Layer with apple compote and cream in a bowl. Chill for at least 2 hours
