Grind walnuts. Work the flour, sugar, walnuts, 1 egg yolk, fat, lemon zest, cinnamon and cloves in a bowl with the dough hook of the hand mixer. Knead quickly with cool hands to form a smooth dough.
Wrap in foil, put in a cool place for approx. 1 hour. In the meantime, wash, peel and quarter the apples and remove the core. Put in a saucepan, mix with lemon juice, cinnamon stick and sugar and steam for about 10 minutes.
Wash the raisins, pat dry and add. Grease the springform pan (26 cm Ø) and sprinkle with breadcrumbs. Knead 2/3 of the dough (keep the rest in the cold) and roll out about 3 mm thick between 2 layers of cling film.
Cut out the base to the size of the shape. Shape the leftover dough into a thin roll and place it around the base. Press the dough up 11 / 2-2 cm on the edge of the springform pan. Remove the cinnamon stick from the apple compote. Spread the compote on the dough base.
Knead the rest of the dough, roll out between two layers of foil to the size of the shape. Remove the top film. With a pastry wheel and a ruler, rub out approx. 1.5 cm wide strips. Place the strips on the foil in the freezer for a few minutes so that they become firmer.
Remove the strips from the foil and place them in a grid on the apple compote. Cut off the overlapping leftover dough, press the ends of the strips onto the edge of the springform pan. Whisk the rest of the egg yolk with the cream and coat the lattice with it.
Bake the cake in a preheated oven (electric stove: 175 ° C / gas: level 2) for 35-40 minutes. Let cool and dust with icing sugar if you like. Makes about 12 pieces.
