Place the apple slices in rows close together on the dough. Cover and let rise in a warm place for about 10 minutes. Pre-bake in a preheated oven (electric stove: 200 ° C / convection 175 ° C / gas: level 3) for about 20 minutes. In the meantime, beat the egg whites and a pinch of salt until stiff, gradually sprinkling in 180 g of sugar. Beat until the egg white shines. Briefly stir in desiccated coconut. Sprinkle the coconut mixture on the hot cake in a grid as quickly as possible, put it back in the oven immediately and bake at the same temperature for another 10-15 minutes. Place the baking sheet on a wire rack. Let the cake cool down a little. Bring the jam to the boil with 1 tablespoon of water, strain through a sieve.
